If you’re into spicy food, well then you’ve come to the right place. Kevin from Hot Head Salsa may be a chemist by day, but every chance he gets you’ll find him either in his kitchen fermenting hot sauces, or sampling spicy peppers around town (chili-pepper eating contest, anyone?). If you want to know about lacto-fermentation and spicy stuff - Kevin’s your guy.

Always wanted to make your own hot sauces at home, but unsure where to start? Looking to up your game on the Scoville scale? Or are you in need of a spicy gift for a friend? Then this is for you.

During this afternoon Kevin will take us through;

1) the basics of lacto-fermentation, including science and benefits, plus various pepper profiles (heat/flavour)
2) a tasting of different fermented hot sauces (which refers back to what was just explained about the differrent pepper profiles)
3) a hands-on hot sauce fermentation preparation; mix & mash various peppers, fruit and veg to make your own hot sauce (that will continue to ferment at home).
We will aim to wrap up and close down around 16:30 (but the exact time will depend on the number of questions).

When: Sunday, January 26th, 14:00-16:30 at the Fermentary (Zonneplein 19)

Tickets: €38.50 per person*
*this includes a 0.5L “fermentation” jar with your own hot sauce (to finalise the fermentation at home),
plus an easy-to-use recipe with tips for making lacto-fermented hot sauce at home.

Terms & Conditions:

  • The workshop starts at 14:00. If you expect to arrive late then please let us know, and we will of course try to catch you up as well as possible, but since some participants might need to leave on time it wouldn't be fair to postpone the start time. 

  • Can't make it for any reason? Your ticket can be changed or refunded if you cancel at least 10 days in advance. This timeline is set due to the required preparations and raw materials needed for the workshop. 

  • If we do not reach the minimum required participants, then the workshop might need to be rescheduled.

  • We reserve the right to change or cancel the workshop at any time.
