This is a vegan version of the traditional Korean Red Gochugaru kimchi. It’s made with sundried, red chili pepper flakes, ginger, garlic, and rice porridge; fermented for weeks. Instead of fish sauce or dried shrimp, the homemade broth is based on shiitake mushrooms.
